Acar

Acar or also known as Indonesian raw vegetable pickles is a popular accompaniment for many Indonesian dishes, such as Nasi Goreng (fried rice), Sate (satay), Ikan Bakar (grilled fish), and many more. It is super easy to prepare at home. The key ingredient to the best Acar is to use fresh & clean vegetables. Acar can be enjoyed after 1-2 hours, but the best one is to let it rest for at least 24 hours in the refrigerator before consuming it.

Ingredients:

  • 2 Fresh cucumber
  • 1 Fresh carrot
  • 5-10 Fresh shallot
  • Fresh chili padi / bird’s eye chili (optional)
  • 3-4 tbsp Apple cider vinegar
  • 1 tbsp Honey
  • Salt
  • 500ml Hot water
  • Glass jar with lid

How to make it:

  • Sterilize glass jar and its lid by boiling them in the water for 10-15 mins, clean and dry well
  • Wash & dry cucumber and carrot, then dice them
  • Peel the shallot and cut them into two or to leave it as a whole shallot
  • Wash, dry & remove the stem from chili padi
  • Mix apple cider vinegar, honey, salt, and hot water, make a correction on taste if necessary
  • Add vegetables and stir
  • Transfer to a glass jar, let it rest for 1-2 hours before it is ready to be enjoyed
  • Store the glass jar in the refrigerator, it should keep fresh for up to 2-3 weeks
